Today we are in the kitchen with a super easy, no bake lemon pie. Did I say no bake??
This was really good. The pie crust I bought was a a tad to big, but I am not complaining about having to much crust 🙂
Here are the ingredients:
2 (14 oz) cans sweetened condensed milk
3/4 cup fresh lemon juice (about 6 lemons)
8 inch pie crust
Mix milk with lemon juice until slightly thickened. Pour into pie crust. Place in fridge for about 3 hours or until firm.
At first, I didn’t taste a lot of lemon, after it set, the lemon taste did get stronger but not intense. It was quite refreshing and I will make again.
For homemade whipped cream:
1 Cup cold heavy whipping cream
2 TB powdered sugar
1 TSP vanilla
Beat with mixer until stiff peaks form.
