Hi Everyone Happy Friday To You!
For our Pinterest Inspired Project today we are headed to the kitchen to make some muffins. Not just plain muffins though, these are cinnamon sugar donut muffins 🙂
Okay, while these ones look perfect, mine do not, BUT, they do taste yummy!
Here is the inside: (nice and moist)
Things I would do different next time. Make them smaller for sure. I would use the mini muffin tins and definitely use more of the cinnamon/sugar mixture.
Here is the recipe:
- FOR THE MUFFINS
- 1 1/2 Cups Flour
- 1/2 Cup Sugar
- 1 1/2 TSP Baking Powder
- 1/8 TSP Salt
- 1/2 TSP Cinnamon
- 1/4 TSP Nutmeg
- 1 TSP Vanilla Extract
- 1 Large Egg
- 1/2 Cup Milk
- 1/3 Cup Butter (melted & cooled)
- FOR THE TOPPING
- 1/3 Cup Sugar
- 2 TSP Cinnamon
- 5 TB Butter (melted)
- 1. Preheat oven to 350 degrees. Grease muffin cups or line with paper liners. Set aside. 2. In bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. Set aside. 3. In separate bowl, beat the egg. Add the milk, vanilla extract and melted butter to the egg and mix well. 3. Add the wet ingredients to the dry ingredients and stir just until moistened. Do not over mix! 5. Spoon batter into muffin cups about 1/2 to 3/4 of the way full. Bake in preheated oven for 20-25 minutes. Allow muffins to cool for 5 minutes before removing from pan.
- For the topping: In a small bowl, combine the cinnamon and sugar. In another bowl, melt the 5 TB of butter. Dip the muffins into the butter, then roll in the cinnamon/sugar mixture.
Mine were done in about 20 minutes. They did not brown on the top. Again, I would recommend using the mini muffin tins and add more of the cinnamon/sugar mixture. Overall, I thought these were really good and moist, just a little to big for me 🙂
